METHOD

Macerate berries

Wash and pat dry the berries with paper towel. Cut the strawberry and blackberry in small pieces to help them release the most juice. Mix diced strawberries, blackberry, blueberry and raspberry in a bowl with sugar, lemon juice. Give everything a nice stir and let the berries macerate for at least 20-30 minutes.

Berries Juice & Puree

Strain the berries through a fine mesh strainer applying some pressure and mixing to get the most juice out.

Blend the berries until you get a smooth puree. (pass the berry puree through a fine sieve to remove any seeds). 

Mascarpone Cream

In a large bowl add mascarpone cheese, whipping cream, condensed milk and lemon zest. Whip on low speed until it starts to thicken. Using a spatula mix in the berry puree

Assemble Berry Tiramisu

Dip the Savoiardi cookies in the berry juice. (you can add liquor to the juice if you like extra flavor)

Cover the dish with a layer of berry mascarpone cream. Place a layer of soaked savoiardi cookies again and 

top with more mascarpone cream. Garnish the berry Tiramisu with cocoa powder and fresh berries (if you like).

Place in the fridge for at least 2 hours.
