TOMATO SAUCE
TOMATO SAUCE
Ingredients
2 tbsp extravirgin olive oil
1 small onion, finely chopped
2 garlic cloves, sliced
1 kg canned whole San Marzano tomatoes (or fresh ripe tomatoes, peeled)
1 tsp fine salt (adjust to taste)
1 pinch black pepper
1 tsp sugar (optional, only if tomatoes are very acidic)
6–8 leaves fresh basil
1 tbsp olive oil to finish
Instructions

Warm olive oil in a pot over medium heat. Add onion and cook until soft and translucent, then add garlic and cook briefly until fragrant.

Crush the tomatoes by hand or with a spoon and add them to the pot along with salt and pepper.

Lower the heat and simmer gently for 45–60 minutes, stirring occasionally. The sauce should thicken and the flavors should deepen.

Taste and adjust salt. Add a pinch of sugar only if the tomatoes are overly acidic.

Stir in fresh basil and a final drizzle of olive oil. Remove from heat and serve or blend for a smoother texture.
