 Palmier Cookies (Elephant Ears)

Palmier cookies are crispy, buttery French pastries made with puff pastry and sugar. They are simple, elegant, and perfect for beginner bakers.

Makes

12–15 cookies

Ingredients

  • 1 sheet puff pastry (about 250 g), thawed 
  • 100 g sugar 
  • 5 g cinnamon (optional) 


Method

  • Preheat the oven to 200°C. 
  • Line a baking tray with parchment paper. 
  • Mix the sugar and cinnamon together if using cinnamon. 
  • Sprinkle half of the sugar mixture onto a clean surface. 
  • Place the puff pastry on top and sprinkle the remaining sugar mixture over the pastry. 
  • Gently roll the pastry with a rolling pin so the sugar sticks to both sides. 
  • Fold both long sides of the pastry inward toward the center, then fold again until they meet in the middle. 
  • Fold one side over the other like closing a book. 
  • Chill the rolled pastry in the fridge for 15 minutes to make slicing easier. 
  • Slice into pieces about 1 cm thick and place them on the baking tray with space between each cookie. 
  • Bake for 12–15 minutes until golden and caramelized. 
  • Flip the cookies halfway through baking for even color. 
  • Let cool slightly before serving. 


Beginner Tips

  • Cold pastry is easier to work with
    If the dough becomes soft, place it back in the fridge for a few minutes. 
  • Use parchment paper
    Melted sugar can stick to the tray. 
  • Do not overcrowd the tray
    Palmier cookies expand while baking. 
  • Watch them carefully near the end
    Sugar can burn quickly. 
  • Flip halfway through baking
    This gives both sides a crispy caramelized finish. 
  • Store in an airtight container
    This helps keep them crisp longer.
