METHOD |
In a clean meat cutting board, diced the beef tenderloin and put in a bowl.
Minced all the vegetables and put in to the bowl with the tenderloin.
Mix the steak, shallots, gherkins, capers, chives, parsley, and egg yolks, along with Dijon
mustard, Tabasco, Worcestershire sauce, EVOO, Maldon smoked salt and Black pepper.
Taste and adjust to your liking with more salt or spice.
Put the Tartare in the middle of a serving plate and give the shape that you prefer.
Garnish on top of the tartare with Baby Spring Mix Salad seasoned with your favorite dressing
Fried the shallots until Golden Crispy and topped the salad for the tartare.
