PAN SEARED SALMON WITH LEMON BUTTER
Ingredients (2 servings)
- 2 salmon fillets (skin-on, ~150–180 g each)
- Salt & black pepper
- 1 tbsp olive oil
- 30 g unsalted butter
- 2 garlic cloves (crushed)
- Juice of ½ lemon
- Zest of ½ lemon
- 1 tbsp chopped parsley (optional)
Step-by-Step
1. Prep the salmon
- Pat the salmon dry with paper towel (this helps crisp the skin)
- Season both sides with salt and pepper
2. Heat the pan
- Place a non-stick or stainless-steel pan on medium-high heat
- Add olive oil and let it get hot (slightly shimmering)
3. Cook the salmon (skin-side down first)
- Place salmon skin-side down
- Press gently for 10 seconds so it doesn’t curl
- Cook for 4–5 minutes without moving → skin becomes crispy
4. Flip and finish cooking
- Flip carefully
- Cook 2–3 more minutes (depending on thickness)
5. Make the lemon butter sauce
- Lower heat to medium
- Add butter and garlic to the pan
- Once melted, add lemon juice + zest
- Spoon the sauce over the salmon for 1 minute
6. Finish
- Turn off heat
- Sprinkle parsley (optional)
🍽️ Tips for Perfect Salmon
- Don’t overcrowd the pan → better crust
- Salmon is done when it flakes easily with a fork
- Slightly translucent center = juicy, not overcooked
