Ingredients

2 ripe mangos, peeled and diced

1 small onion or shallot, finely chopped (red onion recommended)

1 jalapeño pepper, finely chopped (or habanero for more heat)

1/2 bell pepper, chopped

4 g fresh cilantro, chopped

1 garlic clove, minced

2 tbsp extra virgin olive oil or avocado oil

1 lime, juiced (about 2½ tsp)

1/2 tsp sea salt or pink salt

1/8 tsp freshly ground black pepper

Instructions

Add all ingredients to a medium mixing bowl.

Gently fold everything together until well combined.

Taste and adjust seasoning—add more lime, salt, or cilantro as desired.

Serve immediately or refrigerate for up to 5 days.
