METHOD |
On a clean cutting board, finely dice the beef tenderloin and place it in a bowl. Finely chop the shallot, gherkins, capers, chives, and parsley, then add them to the beef. Add the egg yolks, Dijon mustard, a few drops of Tabasco, Worcestershire sauce, olive oil, salt, and black pepper. Mix gently until everything is evenly combined. Taste and adjust the seasoning with more salt or spice if needed. Spoon the tartare onto a plate and shape it as you like. Top with a small handful of baby salad leaves lightly dressed with your favorite dressing. |
